  • Sourdough Starter Workshop May 16, 2013 - 6:30 pm Learn how to cultivate natural local wild yeast to make your own sourdough starter for great breads, pancakes & quick breads. We will begin our starter fermentation in class with a follow-up class May 22 to check your progress.

You can go to www.newcastleproduce.com to sign up online (Classes will be posted online after 4 pm. 5/9), or call Newcastle Produce (916)663-2016, or sign up in person!


All evenings include recipes, training, shopping for ingredients, and menu planning. Please plan to arrive on time. Private cooking classes are available.  Please make reservations two weeks ahead of time and with a minimum of 8 students. You can sign up for classes at www.newcastleproduce.com. Class fees are non-refundable. If you are unable to attend a class, please let us know one week ahead and we can transfer you into another class. Classes may be canceled if there is insufficient enrollment. If this happens, we will contact you by phone one day before the class is scheduled. You will have the choice of transferring to another class or receiving a full refund.

Quick Pickles
May 30, 6:30 pm. $45 per person
A time –honored method that is more than just a sour cucumber.  A great way to learn how to preserve fresh vegetables and fruit, or make unique gifts for friends.  Each student will go home with jars filled with pickled strawberries and rhubarb, pickled carrot and ginger, and a medley of pickled vegetables. We will also have a label and tag station set up as well to add that special touch to your jars!
 
LEMONS!!!
June 3, 6:30 pm. $40.00 per person
From lemon curd to lemon pies, lemon bars, and lemon cupcakes you will hopefully get that lemon fix with these great recipes. Each recipe will be demonstrated with generous tastings. 
 
Summer Pasta
June 11, 6:30 pm. $40 per person
Break out your dusty pasta maker and let`s get rolling! We will go step by step making pasta dough in this hands on class. Also, you will learn how to make flavored and different colored pastas. Each student will go home with wonderful handmade artisan pasta.  
 
Grilling: Rubs & Marinades
June 24, 6:30 pm. $45 per person
Learn the essential techniques for grilling chicken, pork, shrimp, and flank steak. We will be grilling a (South African smoked sweet spiced rub chicken breast), (marinated and dry rubbed pork tenderloin  with coffee, lavender, and elderberry balsamic), (Shrimp marinated in miso and ginger), and (flank steak marinated in bourbon and brown sugar). There will also be some local beers paired with the meats!
 
Girls Night Out! Dressed to Grill
June 28, 7:00 pm. $40 per person
Calling all the ladies! Get your grill fired up for this HOT class! We will be starting out with caramelized grilled pineapple, crostini with goat cheese, grilled red peppers and spices, Thai chicken sliders with awesome condiments,  Grilled veggies for a cous cous salad with a pomegranate dressing, and grilled polenta  with peaches, honey, and ginger and mascarpone. What to drink with all this you may ask?! Silk Road Soda.  Co-founders of SRS will be joining us for the evening (they said they will do their hair!)  creating an evening of enchanting flavors and discussion! Recipes included!
 
Ice Cream & Popsicles
July 1, 6:30 pm. $40 per person
Make ice cream and popsicles like and artisan! Peach pie ice cream, rich creamy Madagascar Vanilla ice cream, strawberry basil popsicles, and a mojito popsicle! Learn creative techniques, recipes for ice cream sandwiches, and floats! 
 
Summer Preserves
July 9, 6:30 pm.  $45 per person
A great way to preserve the summer! In this demo- preserves class you will learn how to make amaretto peach preserve, strawberry balsamic preserve, carrot marmalade with chai spices, early girl tomato marmalade. You will come out of this class with the confidence you need to start preserving the best local ingredients our area has to offer!
 

 

In a Pickle?!
July 10 and 15, 6:30 pm. $45 per person
Get your slow food art on with this class learning how to make ferment pickles the old-fashion way. If you don’t want to wait?! Don’t worry! We will also be making quick pickles and sweat bread and butters. 
In this hands on and demo class you will go home with a three jars of products. Enjoy the fruits of your labor this summer by preserving its best vegetable. 
 
Totally Tomatoes
July 17, 6:30 pm. $40 per person
Get that pantry full of summer goodness with wonderful tomatoes. In this demo class you will learn ins and outs on how to can tomatoes. Boiling water bath and pressure canning with be demonstrated.  We will also make salsa, tomato jam, and dehydrated tomatoes!  This is a demo class and all participants will go home with a jar of canned tomatoes, salsa, and tomato jam!
 
Girls Night Out: HOT AUGUST!
August 9, 7 pm. $ 40 per person
It’s hot, hot, hot in the kitchen so spend your evening at NP with the girls! Enjoy these must have summer foods paired with local wines. We will be starting out with bacon wrapped shrimp on a bed of greens, the best steak salad with summer’s bounty, grilled corn on the cob, and strawberry shortcakes. 
 
Agrarian Kitchen
August 12, 6:30 pm. $45 per person
This class will guide you on the basics how to bring homegrown and local to your everyday life. We will be making ricotta, kimchi, kombucha, starting sprouts, and flavored mustards. This class will be the beginning of a series. 
 
World of Sauces
August 21, 6:30 pm. $40 per person 
Explore global flavors that will add complexity to your dishes.  In this demo class we will be making mornay sauce, coconut curry sauce, BBQ sauce, Thai peanut sauce, Mole, and crème anglaise.
